This Peregrine Falcon was actually sitting on a keeper's glove. I don't think you can get a shot like this in the wild. You can see that he has no tonsils.

Actually, birds have between 6 and 8 "tonsular units" located at the top of their esophagus. They perform much the same task in birds as tonsils do in humans.
